Chocolate Chewy Cookies

Chocolate Chewy Cookies

Preheat oven to 350.

In a medium bowl, combine:

1 3/4 c. flour
2/3 c. powdered sugar (sifted)
1/3 c. unsweetened cocoa
1 T. baking powder
1/4 tsp. salt

In your microwave, melt:

4 oz. of your favorite semi-sweet or milk chocolate, chopped into bits (I used Dove dark chocolate)

Pour melted chocolate into a large bowl and let cool. Stir in:

1 c. packed brown sugar
3 T. apple sauce or babyfood prunes
1 T. vanilla extract
3 egg whites (lightly beaten)

Mix well.
Stir in flour mixture. Drop by tablespoon on to cookie sheet lined with parchment or lightly coated with cooking spray. Bake for eight minutes. Cool 2-3 min. on pan.

If you make 36 (3-doz) cookies, each is about 75 calories.

However, total recipe is 2675 cals, so divide the number of cookies you make into that to find your calories-per-cookie.

Make sure not to overbake. The texture should be chewy and a bit harder than a soft cookie. I made bar cookies rather than drop cookies, and I think I baked mine for 18 min at 350, but I could have probably done fine with 15 min.

These sound good but I was surprised there is chocolate there in them. Are we allowed dark chocolate?

Dark chocolate is pretty safe. Just don't eat huge amounts of it.

Yes, you can have some dark chocolate!

As for the amount...er...hrm. Do you have the solid Ghirdelli squares over there? They're about an inch square. Those were pretty safe for me when I started out.

Dark chocolate is safe as long as it is dairy free and you only eat small amounts. Dairy-free or not, it's still pretty high in fat. Enjoy a little bit after a safe meal!

Any of the egg replacements that I posted for you in an earlier thread. Remember? The oil, water or vinegar, and baking powder; mixed together. Or the yeast and water, or the unflavored gelatin and water.

I think that would be fine. Just be sure to read the ingredients to make sure there's no dairy.
