Applesauce Bread (bread machine)

I'm all about the fruit and veggie breads right now, can't you tell? I think I like this one even better than the carrot-ginger bread I posted a couple days ago.

1 small apple, peeled, cored & grated
2/3 cup warm applesauce
1/2 cup warm apple juice or water
Pinch nutmeg
1/2 tsp cinnamon
4 tbsp sugar (I used 2 tbsp)
1/2 tsp salt
2 1/2 cups flour
1/2 cup quick oats
1 1/2 tsp bread machine yeast

Put everything in the bread machine in the order recommended by your machine's manufacturer... run the White cycle, light crust. Makes a 1 1/2 lb loaf.

This sounds delicious. Does it come out more like bread-bread or more like a quick bread? I'm thinking more like a regular bread, but how do you eat it? Just toasted? Yummy French toast? Definitely not a sandwich bread....although some peanut butter on it sounds pretty good.

By quick oats, do you mean like Quaker Oats in the cylinder type thing or something different? I haven't had any oatmeal since having IBS, and this might be a good way to see if I can handle them....

I use the quick-cooking oats, the kind that cook for something like a minute on the stovetop... you could use normal rolled oats too, the ones that cook for 5 minutes, but if you're just trying oatmeal again, you might want to stick with the quick kind.

Not a quick bread. Actually, with the decreased sugar, it's not all that sweet... I could see eating it with something like roast chicken, but then, I often like fruit with chicken anyway. But yes, I just eat it as is, or lightly toasted. I don't even put anything on it, but then, I'm weird. Peanut butter and jelly would both be pretty tasty on it, I think.

Could it be baked in the oven as well? Would I leave off the bread machine yeast? I didn't notice any baking soda. Doesn't need it? Sounds yummy! I love applesauce cake/bread! I am guessing it would be a soluble fiber food?

And there's no baking soda, no... it's a regular bread, like sandwich bread, NOT a quick bread.

You could try to make it without a bread machine, but please look up the basics of making a loaf of yeast bread by hand - it requires multiple risings and a LOT of kneading.

And yes, it's still soluble.

I've been digging through fatfree.com and printing off bread recipes like mad... I mostly just snack on bread (rather than making sandwiches) so I wanted something a little more interesting than plain white.

Blueberry is next!
