HONEY OATMEAL MUFFINS

HONEY OATMEAL MUFFINS

1 c quick cooking oats, uncooked
1-1/2 c bread flour
1 tbsp baking powder
1/8 tsp salt
1 egg, beaten or 1 egg beater or 1 egg white
3 tbsp honey
2 tbsp oil or applesauce or pureed prunes (babyfood)
1 cup soy milk, plain or vanilla
veg cooking spray

Combine first 5 ingr in mixing bowl. Make well in center of mixture and set aside.

Combine egg, honey, oil, milk and mix well. Add liquid mixture to dry ingr stirring til just moist. Spoon into muffin pans coated w/cooking spray, filling 2/3 full. Bake at 350 for 18 min. Yield 14 muffins.

Let us know how they turn out.

Have you made these? They sound really nice. Do you think they could be made with ordinary white flour?

Kerrie - I don't see why they can't be made with regular white flour. I only use bread flour when I use the bread machine. Let me know how they turn out and, no , I haven't made them but the recipe looks good. I'm usually pretty good when picking out recipes I haven't made. I'd say my success rate for picking a good one is about 95%...but then, there's that 5%!!!!

Sharon,
I made them and they taste really good. I made a few changes to suit me. (very sweet tooth!) I substituted the bread flour for the same amount of regular white organic flour. I used 2 egg whites, and added 1/2 cup of sugar. I used plain soy milk as I didn't have any vanilla soy so I added 1 tsp vanilla. I also used applesce rather than pureed prunes (can't get them here) or oil.

The best thing was they were so fast to prepare, fast to cook and there wasn't much washing up. (3 very important things I say!)

P.S This recipe has also given me ideas for other muffins. I was thinking you could add chopped pecans or cranberries, or maybe try maple syrup for the honey?

Kerrie: Try the baby food department for your prunes. I can't imagine them not having any. That's where I purchase mine! I don't think they actually make a pureed prune any other way? karin

Trish - I'm going to figure the points out and I'll get back to you today. Sorry I didn't do that in the first place, but I wanted to get some more recipes on the board!

Trish - (nice photo) I just figured out the points. Made with 1 regular egg and 2 tbsp veg oil they would be 2.25 points each for 12 (where'd the 14 come from? Did you ever see a muffin tin with 14 holes?)

Anyway, if you make it with applesauce instead of oil and 1 egg beater instead of 1 whole egg, the points each is 2.08 for 12. Not much different, but every little bit helps!

thanks for the points. And saying I had a nice photo! I am actually starting to loose weight YAY!!! I feel great and my girlfriend who hadn't seen me for a while said I had lost heaps of weight - we say heaps a lot in Australia... LOL.

I do have some weight watchers cookbooks with points I got a while ago and I am going to go through them. When I find some good ones, I will post them.
