Manhattan Clam Chowder

I had Manhattan Clam Chowder when I went out to lunch today, and I realized there weren't any recipe for it on the index! This one's very basic (i.e. quick and easy), which is how I like to cook! Just be careful if tomatoes are a problem for you, since this is a tomato-based soup.

Manhattan Clam Chowder (Quick)
(Makes 2-4 servings)

2 tablespoons chopped onions
1/4 cup sliced celery (optional)
1 (6.5 ounces) can minced clams (I use whole baby)
1 (16 ounces) can tomatoes, chopped with juice (or 1 can stewed tomatoes)
1 small potatoes, cubed
1 small carrots, chopped
1 dash thyme or marjoram
salt
cayenne pepper
1 slice soy or turkey bacon, cooked and crumbled (optional)
oyster crackers (optional)

Combine all ingredients except crackers in a saucepan.
Simmer covered for 30 minutes or until veggies are tender.
Serve with oyster crackers or crackers of your choice.

I made this today for lunch, Kree, and it was delicious!

I used all the ingredients except the crackers (we didn't have any, so I served it with flour tortillas - a little fusion cuisine ). I added the juice from the can of clams - you didn't say anything about draining it and it didn't look like enough liquid without it - and a can of diced tomatoes.

I made Heather's New England Clam Chowder about a week ago, so after lunch today I asked my DH if he preferred Heather's New England or your Manhattan. He said he wasn't sure, that he thought I needed to make Heather's again so he could compare. I have a sneaking suspicion that after I make Heather's again, he'll want me to make yours again so he can compare.
