Quorn chilli

I've tried to adapt a favourite meal of my MIL's here. Seems to have gone down very well so far!

This makes enough for 2 very large portions or 4 small ones.

150g Quorn mince.
1 small onion, finely diced.
1 green bell pepper, diced.
1 cup sliced mushrooms.
1 tbsp olive oil.
1 tsp fajita spices (add more to taste or use chilli, cayenne pepper and paprika).
1 fresh tomato, chopped.
1 tin (about 400g) Peeled Tomatoes.
1 tin (about 400g) Red Kidney Beans...I pureed 3/4 of the beans - I guess you could vary this according to tolerances.

Rice or bread to serve with it.

- Heat oil in a medium saucepan.
- Add onion and peppers and cook until onion starts to turn brown and soft.
- Add mushrooms and cook for a few minutes more.
- Add the Quorn mince.
- Add the spices and cook, stirring for 5 minutes.
- Add the tinned tomatoes, pureed and un-pureed beans and fresh tomato.
- Cook for about another 5 minutes, adding more spices to taste or water if it gets too thick.
- Serve with rice or fresh white bread.

What is quorn mince? Do we have that in the US? n/t new

I googled and found it to be a meat substitute brand name Quorn and it is the minced version. Don't know anymore.

Yeah, it is a meat sub. I'm pretty sure I've seen it somewhere in the US, but I don't think it's as widely available. I'm sure any meat sub would work in this recipe. I know Yves makes a good one, and I've heard Casey mention Morningstar's too.

...which is a good few years, and have NEVER had a problem. Both my MIL and Mum eat it and have also never had a problem. In fact, in years of knowing plenty of vegetarians, I haven't come across one person who had an adverse reaction to it.

Having said that, I see no reason why people could not be allaergic to it - you can find somewhere someone who is allergic to pretty much any food! And they're right that it's not actually mushrooms, so IBSers should treat it like any new food (e.g. soy) and not go overboard at first.

Also, people do tend to be very lax about it as it's not meat when it comes to storage etc. There is no reason why you couldn't get food poisoning from ill-prepared/stored Quorn!

IMHO, this is all b******t. We are very safety concious over here - I mean, I can't get a load of drugs suggested in the US for Fibro because the UK people don't think they're safe enough!

It is probably like the way some people are sensitive to wild mushrooms even if they are safe ones. That kind of thing happens.
