Has anyone made "Brer Rabbit Carrot Cake" on page #242 in Heather's book EFI? If so, how did it turn out? Thinking about making it for the Seattle Dinner Gathering on the 5th.

The glaze is YUMMY! I need to make it again, especially since Mike hasn't gotten a piece of the last two cakes I made for parties and he's complaining that he has to smell it, but never gets to taste!

This is one of my favorite cakes. I've never tried it with the glaze though. I use the soy cream cheese icing recipe. I absolutely love these two together but I have to warn you that the icing isn't very low in fat so use sparingly. I usually cut the icing recipe in half and spread that on the cake in a 13x9 pan.

I've been meaning to make that one, too! I love carrot cake. I was planning on icing it with something like this, since that other one is soooo high in fat. It scares me.
Lower fat Cream Cheese Frosting
8 oz soy cream cheese
1 c Marshmallow cream
1 ts Fresh lemon juice
1 ts Vanilla extract
1 c Powdered sugar
In a medium bowl, stir together the cream cheese, marshmallow creme, lemon juice and vanilla until well combined. Then gradually beat in the powdered sugar.
Makes 1 3/4 cups.
