Swirled Cherry Cake
This is one of my favorite cakes ever. I can't believe I forgot to post it until now!
1 box white cake mix or yellow cake mix 3/4 cup Egg Beaters or 6 egg whites 1 cup water 1/4 cup unsweetened applesauce 1 can cherry pie filling (best if it's brand name, not generic--e.g. Comstock)
1. Preheat oven to 350. 2. Grease and flour bottom and sides of a 9x13" cake pan (you can use the Pam spray for baking... it has flour right in it!). 3. In a large bowl, mix cake mix, egg whites, water, and applesauce with a mixer until well blended. 4. Pour batter into prepared cake pan. Smooth evenly in pan. 5. Drop spoonfuls of the pie filling on top of the cake batter. 6. With a knife, swirl the cherry pie filling into the cake batter. Be careful not to touch the bottom of the cake pan with the knife. This might remove some of flour/shortening coating, causing the cake to stick. 7. Bake for 40-45 minutes or until cake is golden brown on top and a knife inserted in the center comes out clean. 8. Allow to cool for 10 minutes. 9. May be served warm or cooled. It's great with soy ice cream!

Don't all boxed cake mixes, like Pillsbury or BCrocker, have some milk products in them?

A lot of the brand name ones do, yes... but most of the generic store brands don't!

Check the store brands. Some store brands do still have dairy products, but sometimes you get lucky. I don't know what stores you have near you, but IGA yellow and chocolate cake mixes are totally safe.
