CARROT PINEAPPLE BREAD

Hi again - my fingers are starting to get tired. This'll be the last one for now. Will post more later.

CARROT PINEAPPLE BREAD

2/3 cup flour
1/2 tsp baking soda
1/8 tsp salt
3 tbsp sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
6 tbsp applesauce
1/2 tsp vanilla
1 egg white or egg beater, lightly beaten
1/3 c shredded carrot
1/4 c canned crushed pineapple in its own juice, well drained
cooking spray

1. Combine first 6 ingr in med bowl. Make well in center of mixture. Combine applesauce and vanilla. Add to dry ingredients stirring until dry ingr are moist. Fold in carrot and pineapple.

2. Spoon batter into 6x3 loaf pan coated w/cooking spray. Bake at 350 for 35 to 38 min or until cake tester inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan and let cool on rack.

Yield: 6 (1") slices

I've been seeing lots of pineapple in recipes for IBS lately. I'm confused I thought pineaple was really bad for IBS......
Someone help me understand!?!?!
