My favorite low fat peanut sauce

In a medium saucepan add cooking spray and a little garlic and ginger. Heat 1 minute and add:
1c. chicken or veg stock
1/2c. reduced fat peanut butter
1/4c. soy sauce
3T. rice vinegar
your choice of hot pepper sauce or hot peppers or whatever you want for spice
Mix in pan and simmer 10-20 minutes. Serve with pasta or as a condiment with wraps or grilled chicken. The total fat count is 48 grams so if you put it on a pound of pasta it would serve maybe 6 and so that would be 8 grams of fat per person. I like it with a pound of linguini, chicken breast, red pepper, carrot, scallion and pea pods with a little Thai basil on top.
