Oprah's Un-Fried Chicken

My Mom used to make this all the time....I did not even think that this would be safe to eat...but it sure is!! I'll be making this real soon... hope you do too. FYI the Old Bay seasoning can be a little pricey, so hopefully you already have some.

Oprah's Un-Fried Chicken
Yield: 8 Servings

Ingredients:
Nonstick Cooking spray
4 Whole chicken breasts, halved and skin removed
3 1/2 c Ice water
1 c Plain soy yogurt

BREADING:
1 c Italian breadcrumbs
1 c All-purpose flour
1 tb Old Bay seasoning
1/2 ts Garlic powder
1/2 ts Creole seasoning
1/8 ts Freshly ground black pepper
1/2 ts Dried thyme
1/2 ts Dried basil
1/2 ts Dried oregano

Instructions:
Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray. Put the chicken in a large bowl with the ice water. Put the yogurt in a medium bowl. Set both bowls aside.
Toss all the breading ingredients into a large, tightly sealed plastic bag. Seal and shake well to mix. Remove two pieces of chicken from the ice water. Roll each piece in the yogurt. Put the chicken into the plastic bag, reseal, and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Repeat the process until all 8 pieces are breaded. Spray the chicken lightly with the cooking spray. Place the baking sheet on the bottom shelf of the oven and bake for 1 hour, turning pieces every 20 minutes to allow for even browning. Serve hot or at room temperature.

I don't know if it would change the texture of the coating.... I just left a voice mail for my Mom to ask her what she thinks.

I also think it sounds yummy! Only problem is what is 400 degrees farenheight (sp?) in degrees celcius cause I don't have a clue! Can anyone help?

Same ole dinner huh?? Well, I am just starting to understand about the food stuff. But did Oprah really eat this chicken??? And another good thing about this site is that I might be able to find some ordinary regular food that will not scare the dickens out of my husband. He looked at the Eating for IBS book and says "this is rich peoples food, not the kind of stuff we eat." So maybe these recipes will help to get us started.

I am probably alot like you that I am bored with potatoes and rice plain only. I need some variety in my food. And to think that I really enjoyed eating before I got so sick.

Sounds very yummy. I remember her talking about it. When I am feeling better I will try it. Can't handle spice/flavour of any kind right now.
