I have not tried this recipe yet, but my mom makes it with regular beef and it is fantastic. I am planning on substituting ground turkey for the beef. I think it will be fantastic. I'll let you know how it turns out.

Turkey Chili

1 lb lean ground turkey (Jennie-O is a good brand)
1 small onion
1 can chili beans
1 can diced tomatoes (w/ green chilies optional)
2 cans water (use the tomato cans to measure)
1 can (very small) tomato paste
1 envelope chili seasoning

Brown the turkey with the onion; drain well. Add the remaining ingredients (do not drain off liquid in cans) and stir well. Bring to a boil and reduce heat. Simmer for an hour.

My suggestion is to serve this in a bowl with crackers and soy cheese or over spaghetti. My husband suggests also serving over plain baked potatoes with soy cheese and soy sour cream if you're feeling adventurous.

Thanks for this simple recipe! This was a huge hit with my hubby (and myself). We ate this with Heather's Simple Sweet Corn muffins (which were also dynamite!!)

I couldn't find chili beans, so I used kidney beans, which were great. In place of water, I used chicken stock for a little extra flavor.

I didn't have a packet of chili seasoning, so I found a recipe to mix my own.

Chili Seasoning (use about 1/2 in the chili recipe)
Save the leftover seasoning in an airtight container.

2 tablespoons chili powder (or 1 TBSP Cayenne Pepper)
1 teaspoon salt
1 teaspoon onion powder
2 teaspoons cumin
1/2 teaspoon garlic powder
1 teaspoon oregano
