any micro-only / non-cook favorites?

Hi all-
i'm a newbie here and still trying to navigate the IBS shuffle.
I have been amazed at the impact of subtle diet changes and am inspired to manage this a bit better.
Here's the question: i am living in a live/work w/o a kitchen. I need to figure out ways to eat that do not require cooking ammenities beyond a microwave.
Does anyone have any down-and-dirty microwave or no-cook recipies?
i have been blending- the smoothie recipes on the board and in Heather's book are great but woman cannot live off smoothie alone. Or something.

Hi there - TessLouise had some past posts on cooking and eating suggestions for folks living in college dorms, and that info should really help - I can't find the post on a search because I can't remember any of the keywords from her post! TessLouise, do you remember these posts?
You could buy a crockpot - there have been a lot of recipes posted for those. Or a rice cooker. You might check the recipe index for microwave friendly recipes...

i know you can make rice in the microwave... as far as i remember it's pretty simple. just buy a box that has microwave instructions on it. mostly i think you just have to make sure you have a covered container. i bought some basmati rice from whole foods that worked great in the microwave. but i know it works with other kinds, too.
frozen veggies are easy to cook in the micro, too. just put them in a covered dish with a little bit of water and microwave till they're nice and soft.
instant grits and oatmeal and cream of rice are all good breakfast microwave-y things...
i even made pasta in the microwave! micro the water to a boil, add the pasta, and micro some more for however long it says on the box (i tried that when i was living in a hotel for 2 weeks when i first moved to florida)
hope this helps a little... i just thought of these off the top of my head.

p.s. oh, i posted a while back about "soy quesadillas". it's a good snack. just take 2 tortillas, put some shredded soy cheese in the middle, and microwave till it melts. they're really good with salsa!

I posted some that heat up well - Pancit Bijon (don't be scared - it's just rice noodles with chicken and veggies), microwave onion rice (you can always add some chicken or seafood), ... I'll think more on this.
I also got into buying Michelina's frozen entrees. Check the low fat options and read the labels carefully. I found most of these with a rice or pasta base to be quite safe - especially the stir frys and thai options. Be very careful with them to make sure there's no dairy.

i must admit that, being a complete klutz in the kitchen, i found the prospects of living without one divine. then my hubby and i both decided that, by golly, we'd finally eat right for our IBS. (yep- 2 is double the fun, no?) :>)
anyway, i am feeling a lot more hopeful and even more amazed at how helpful you all are.

Heres a yummy one! You can cut it in half if you don't want to make this much!
1lb small red potatoes-washed and partially peeled(one or two swipes around the middle with a knife or peeler) 1 TBS butter(I use rice butter substitue) 1 TBS snipped fresh chives S & P to taste (I also add a little garlic!) In microwave safe bowl, combine potatoes, S & P, and 1 cup water. Cover bowl with plastic wrap and cut a slit in top to vent.Cook on high for 20 minutes, every 5 minutes stop and stir to evenly haet. Add butter and chives to hot potatoes, toss gently intil butter melted and all water is absorbed.

Hi everyone.
This makes an appearance a few times a month, often when we have guests around. Very easy, and really adaptable. We have made versions of this with thai red & green curry. You can also stir through a pasta sauce to give it a kick. It can be vegan, vego or have meat in it. I stick to vegan, but it works well all three ways.
1 onion, peeled and diced 2 tablespoons olive oil 1 cup aborio rice 2 cups stock * 1.5 cups assorted vegies ** 1/4 cup toasted pine nuts
1. Place onion & oil in a 2 litre casserole dish. Cook uncovered for 2-3 mins on high, stir, cook for another 2-3 mins.
2. Stir in rice and mix well until rice is covered with oil. Add stock and vegies. (If you are planning on using meat, add this here too - in small pieces so it will cook too). Cover & cook for 12-15 mins on high. Do not stir.
3. Allow to stand, covered, for 3-5 mins
4. Stir thru pinenuts & parmesan/soy parmesan if desired & serve.
Tuck in!

I made the potatoes & chives tonight. They were so good! I used green onions - wasn't sure if they were the same, either way very tasty.
