Pumpkin Apple Streusel Muffins

Pumpkin Apple Streusel Muffins

2 1/2 cups all-prupose flour
2 cups sugar
1 Tbsp pumpkin pie spice
2 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
2 egg whites lightly beaten, or 1/4 cup egg beaters
1 cup canned pumpkin
1/4 cup canola oil
1/4 cup applesauce
2 cups finely chopped peeled apples

Streusel:
2 Tbsp all-purpose flour
1/4 cup sugar
1/2 tsp cinnamon
4 tsp soy butter, softened

In a large bowl, combine first 5 ingredients; set aside. In another bowl, combine egg whites (or egg beaters), pumpkin, oil and applesauce. Stir pumpkin mixture into dry ingredients just until moistened. Fold in apples. Spoon batter into muffin tins sprayed with cooking spray, filling 3/4 full. Combine streusel ingredients and sprinkle over batter. Bake at 400 for 20-22 minutes or until a toothpick inserted in the center comes out clean. Yield: 2 dozen

I made these this morning. I was feeling lazy and skipped the streusel, but they were still really, really good - Adam ate 4 of them! Thanks for another great recipe!

When you say chopped apples, does that mean diced? Sorry, not too domestic! I was just wondering how finely chopped they need to be. Also, what type is best apple to use for cooking these and how many is usually needed to get 2 cups?

I think I may try these with a Rice Flour version. Hopefully they are GF adaptable! Sound yummy!

I answered you in email, but I'm going to answer here too, in case anyone else needs to know.

I figure by the time you peel 'em, core 'em, and chop 'em, 1 medium apple = approximately 1 cup. I halved the recipe, and I used 1 apple. I didn't really measure it, but just eyeballing it, it looked like about a cup to me.

I use Granny Smiths for baking, usually, but I'd say you can really use any variety you like. Grannies are typically used for baking because they're very crisp and tart.

I cut the apple into about 1/4" dice.

If you manage to make a rice flour version, be sure to post!! I'd love to know how they come out!

This is a lot like Heather's apple pumpkin bread. I like that one. It gets a little gooey on top. Casey can you compare the two?

I've never tried Heather's bread, because I don't even own her books. But I know Rachel has the cookbook; maybe she's tried them both. It's funny, I was thinking that these would be good baked as a bread too.
