Chocolate Mallow Pie

- from 250 Superb Pies and Pastries, 1952. I went to a yardsale this weekend and picked up a TON of old cookbooks... this sounded tasty!

1/2 cup cocoa
3/4 cup water
1 tsp vanilla
1/4 tsp salt
1/4 cup milk (soy or rice)
3/4 lb (12 oz) marshmallows
1 baked pastry shell (see Recipe Index for ideas)
2 bananas, sliced lengthwise
6 marshmallows, cut into halves

Mix cocoa and water to smooth paste and cook over low heat 2 minutes. Cool; add vanilla and salt. Heat milk and add marshmallows; fold over and over until marshmallows are about half melted. Remove from heat and continue folding until smooth and fluffy. Chill about 15 minutes, then combine with the cocoa mixture and chill about 25 minutes longer, stirring twice. Pour into pastry shell and chill until firm. Arrange slices of banana on top of pie in crisscross pattern and decorate with marshmallow halves.

This was so easy to make, and SOOOOO good! I have to work on appearance, but I'm willing to make many more pies to practice!



As you can see, bananas are hard to "crisscross" since they curve, or maybe I'm misunderstanding "crisscross"??? Who knows, but taste totally makes up for appearance!

Oh yeah, and I used graham cracker crust, the one from Heather's EFI Book.

I made this for thanksgiving last week I double the recipe and instead of making it into a pie I layered a 9x13 dish with keebler orginal graham crackers (safe) and then followed the directions and poured this on the bottom let it set and it turned out GREAT! you can make a smaller verison I have before just skip the pie crust and use the graham crackers. I love this recipe its one of my favorites it was a hit at thanksgiving to!

many people can handle marshmallows...and there are some organic ones you can get that certainly are IBS safe!

Artificial colors and flavors are not a good healthy thing but are not unsafe for IBS per se. They do not fall into the main triggers of fat, dairy, red meat etc.

IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

sorry I read what heather said about artificial flavors and sweetners...thanks for pointing that out,yes they can potentialy cause problems.
