Chocolate Fudge Gooey Cake

I'm sure that this recipe or countless variations have been posted before, but I'm posting it anyway.

1 cup flour
3/4 cup sugar
1 1/2 Tbsp. cocoa
2 tsp. baking powder
1/4 tsp. salt
1/2 cup soy/rice milk
1 tsp. vanilla
1/4 cup cocoa
3/4 cup packed brown sugar
1 3/4 cup hot water

Preheat oven to 350 degrees. Spray 9" square baking pan with cooking spray. In a large bowl, combine flour, sugar, 1 1/2 Tbsp cocoa, baking powder, and salt. Beat in milk and vanilla on low speed. Spread batter in prepared pan. Combine brown sugar and 1/4 cup cocoa, and sprinkle over top of the batter. Pour hot water over top. Bake until no longer sticky to the touch, 40-45 minutes. Cool on rack 15 minutes before serving.

This makes a cake with fudgy pudding underneath... serve it with soy/rice "ice cream", and be sure to serve it warm. Ultra-low-fat, only 1-2 grams per serving. Serves 6 - if you have leftovers, heat 'em up before eating!

Yes Casey there is one like this in the recipe index....

I remember the first time I made it. I just wanted a spoon and the pan and solitude for about 2 hrs to devour the entire thing!!! It is soooo good!

We call it Puddin' Cake at our house!!! My recipe has instant coffee in it too. YUMMY!

just how puddingy is this cake..hehe

I'm not a huge fan of pudding.. but moist nice cakes work.

It's pudding-y. It makes a thinnish layer of cake, with definite fudge pudding at the bottom. Although, since you eat it hot-to-warm, I guess it's really kind of like a really thick hot fudge sauce... hmm.

and luckily it doesn't make much and no one else here likes it. I've had it 2 or 3 times this pregnancy so maybe the baby will like it when she is older.

that means you'll have to share or make a double batch!! LOL Notice how fast it goes...?

BTW, how are you feeling now the time is getting close?

This is the recipe I used: web page --- liked it so well, (thank you Peanut) that I haven't changed. Eating it hot or cold, it doesn't matter....it's just awesome anyway you spoon it...........Ewww, am I ever hungry for one...think I'll blow the Las Vegas diet and make some tonight.............

Or if you want to go "whole hog" so to speak, you could dump a can of cherry pie filling on top (assuming it doesn't use HFCS) then some fake ice cream, topped off with some fake whipped cream!!! Yummmm...

thank you this is lush although it wasn't so nice when I was making it and I had a little 'taste' of the batter only to discover I'd forgotten the sugar lol
so good job I was being a piglet eh
it's great that there's no fat in but it tastes just the same as another recipe that does include oil
think I need some sort of cream or ice-cream sub just to tip it over the edge into gorgeousness lol
