Easy Baked Chicken & Potato Dinner for Two

The boyfriend had the quiche for dinner... and this is what I had. As always, be mindful of your tolerances - if you can't do peppers (I can't), fresh carrots are a good substitute. Modified ever-so-slightly from the Betty Crocker website.

2 boneless skinless chicken breast halves
2 tablespoons Dijon mustard
1/2 cup reduced-fat Bisquick (I needed less)
2 large baking potatoes, peeled & cut into chunks
1 small red or green bell pepper, cut into 1/2" pieces
1 small onion, cut into 8 wedges
Cooking spray
2 tablespoons soy parmesan, if desired
1/2 teaspoon paprika

Preheat oven to 400. Spray 13x9 baking dish with cooking spray.

Brush the chicken with 1 tbsp mustard, then coat with the Bisquick. Place 1 chicken breast half at each end of pan. Place potatoes, peppers, and onion in center of pan; brush vegetables with remaining 1 tbsp mustard. Spray chicken and vegetables with cooking spray; sprinkle evenly with cheese and paprika.

Bake 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and chicken is no longer pink.

Edit: I forgot to mention that I skipped the Parmesan, and it was still very good. I did sprinkle it with onion powder and salt instead.

This sounds like it would be very mustardy, but it's actually quite subtle. I think the same general idea would work with Italian dressing instead of mustard, for a change of pace. Yum!

would like to try this but please."what is bisquick"?
quite oten there are ingredients I don't recognise in the recipes so I hope you don't mind me asking.

Bisquick is a pre-packaged baking mix, used to make biscuits, pancakes, and things like that - I imagine it's only available in the U.S., but you may be able to find or make a suitable substitute. It contains white flour, salt, a little bit of oil, sugar, and baking soda. If you can't find anything similar for this recipe, just use some white flour, with generous pinches of sugar and salt mixed in.

...that I've now eaten this almost every night since I posted it. It's that good! I use spicy brown mustard instead of Dijon, and I don't usually put the mustard on the potatoes (I just make oven fries), but still. The chicken comes out tender and juicy. This one was a definite winner!
