Baked chicken with plums (or peaches!), ginger and soy

Baked chicken with plums, ginger and soy- from Avoca Cafe Cookbook

8 chicken breasts
Olive oil cooking spray
1 onion, peeled and chopped
2 Tablespoons lemon juice
1 Tablespoon soy sauce
1 teaspoon ground ginger
1 tablespoon tomato puree
2 tablespoons soft brown sugar
1 teaspoon salt
1 cup/340g/12oz plum jam
1 teaspoon dry mustard powder
dash of Worcerstershire sauce
1 garlic clove
6 fresh plums, stoned and quartered


Season the chicken pieces, then brown them lightly in the olive oil spray and set aside. In a separate pan, gently sauté the onion (with olive oil or butter spray) for 10 mins, or until soft. Add all the remaining ingredients except the fresh plums and simmer for 15 mins.

Arrange the chicken pieces in a single layer in a baking dish. Cover with the sauce and scatter over the plum quarters. Bake in an over preheated to 180C/350F/gas mark 4 for 45 mins until bubbling.


This is really good for entertaining and is really yummy. My mouth is watering as I type the recipe. I usually serve with boiled rice and have a salad bowl on the table. You can make the sauce part the day before if you need to.

Thought this was "safe" but read this before buying the ingredients...Plums are OK for me..I think, I was so excited that one of my favourite recipes might be ok I posted without checking everything. I promise I won't do it again !

Hi- thanks for the delish chicken receipe--going to get some plum jam and try it--I do have some mango jam that I made so if I can't find the plum, I will try the mango- do you think that will work?

LOL! It's ok... I'm always posting things that are spicy-hot, and that's safe for me, but inevitably someone will point out that it isn't safe for everyone. Know what, though? There's bound to be at least one other person floating around that it WILL be safe for. In the case of your recipe, I'm going to try it as is! If it bothers me, next time, I will make it with fresh peaches instead... I think that would work.

I think it should work well with mango too, the sauce is lovely and rich and sticky, so as long as you have a sweet taste that works well with savoury it should go well..Let me know how it works out.
my mouth is watering for dinner and I haven't had breakfast yet!

I made this last night, and it's definitely a winner! I ended up having to substitute a little... all jams and jellies here have HFCS, so I had to use all-fruit spread, and so used apricot instead of plum. I also substituted canned sliced peaches for the fresh plums. STILL FANTASTIC. I served it with basmati rice with onion and ginger, and the two went together perfectly. Thanks, Sinead!

I made this tonight with Apricot All-Fruit Jam & canned peaches. WOW!! We loved it. This was so good.

I also made the onion & ginger basmati rice. I used brown basmati rice.

Good combo.

we had friends over for dinner. I served it with Basmati Rice with Onion and Ginger and mustard potato salad. YUMMY! They loved it and asked about the recipe which is always a great compliment.
