Having a hard time diet-wise, help please!

So, I have been diagnosed with interstitial cystitis, another "diet related" chronic illness.
No spinach, honey, (pears are the only fruit that is safe...sometimes apples and dates are ok). No beans. no soy, rice milk, most nuts are a problem. Any veggie that is a diuretic is off limits (think celery, dandelion, blueberries, cranberries...stuff that's good for a UTI). Bread is back in the picture (though it DOES cause excess mucous for me).
Food is becoming EVIL! It seems if I eat, I will suffer. But not eating is even worse...
Anyhow...you guys are EXPERTS! I know you can help me!
