Veggie and Fruit Skins

I can remember from way back when I was young that I had to eat apple skins and (obviously veggie skins) because it's better for you.
Now what I'm wondering is if you've got the cycle of spasms broken is their enough soluble fiber insides to make it safe to eat the skins of veggies and fruits? Apples, peaches, potatoes and eggplant are some examples of what I'm thinking. I ask because with my shaking hands it's a pain to have to skin everything and of course the skin is good for you. I do like to put some things in smoothies or juices but I mostly find that blended or juiced veggies make me unsettled because they're not the 'right' texture if you know what I mean.

Maybe start by peeling half the apple, zucchini, potato, etc. And if you leave something unpeeled, at least cook it.
