Kree's Dairy-Free Ranch Dressing

Kree's Dairy-Free Ranch Dressing
(Makes 12 servings)

1 cup mayonnaise
1 1/2 teaspoons lemon juice
7 1/2 tablespoons soy milk
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

1. Mix lemon juice and soy milk and let sit for 10 minutes. (An easier way to think about the measurement is to pour 1 1/2 tsp lemon juice into a measuring cup and add soy milk until it reaches 1/2 cup.)

2. In a large bowl, whisk together the mayonnaise, lemon juice and soy milk mixture, chives, parsley, dill, garlic powder, onion powder, salt and pepper.

3. Cover and refrigerate for 30 minutes before serving.

Aww, thanks Barb! If I ever do I'll let you know! It's probably not going to happen while I'm in grad school, but maybe once I get into teaching!

Hey Kree,
I just made this tonight for use in the Pizza Party Mix and may I just say, it was awesome! I'm excited to have a great IBS-safe ranch dressing for me to use. I was wondering, do you know how long this would keep for? I've actually got it in a salad dressing container sealed up in the fridge but I have no idea how long I could use it for.

That's a good question. I usually don't keep dressings and those types of things for more than a week or two, but I'm not sure how long they're officially safe. I just figure it's better to be safe than sorry. Maybe someone else has a better idea??

how can this recipe be safe when there's mayo in it? just curious cause i LOVE ranch dressing and would like to find one that's safe.
about the mayo thing...is fat free mayo ok? it has eggs in it, so doesn't that mean it's unsafe?

There are mayos out there without egg yolks. As a matter of fact, I'm pretty sure all fat-free mayos are yolk-free, because egg yolks are fatty and there's no way the mayos could have no fat if they contained them. I would just check the labels. Personally, I use light mayo and have never had a problem with it. But you could always look at a health food store for organic mayos, too.

Kree, it's amazing, but this tastes SOOOOOO much like "The Real Stuff"! Ranch is my fave, and I hated having to give it up. Now I can have it -- and I can barely tell the difference. AND, I even made it with fat-free mayo! It's YUMMY!
