Grandma's Meatloaf

2/3 c bread crumbs
1 c rice/soy milk
1 1/2 lb. ground turkey(original calls for beef)
4 eggs whites - beaten (original calls for 2 whole eggs)
1/2 c chopped onion
1 teaspoon salt
1/4 teaspoon pepper

Sauce:
1/4 teaspoon nutmeg (can easily be eliminated)
4 tablespoon brown sugar
1/4 cup water
1 teaspoon dry mustard (I still haven't found this..I always use a substitute).

Soak bread crumbs in milk, add meat, eggs, onion, s&p..mix all and form into a loaf pan. Blend sauce ingredients and pour over loaf. I use a fork to sort of press down a little bit of the top - leaving a slight edge to hold sauce on top. Bake at 350 for 45/60 minutes. (my husband likes it browner - so I leave it in more than an hour).

* A sweet alternative to the usual meatloaf. Try it - you will be surprised.

This sounds yummy, it's almost identical to something my grandmother has always made!

Since the recipe calls for 2 whole eggs (and maybe this wouldn't make that much of a difference) but, you might want to post 4 egg whites instead, which would be the equivalent. Also, you might want to suggest rice/soy milk instead of dairy milk.

Thanx Rachel - suggestions always appreciated! Do you double the egg whites if you don't use the yolks? If so I could change some other recipes I just posted.

In order to make it equivalent, you need to double the egg whites. Hey! Glad I could help!
